When we are talking about TCM, some rules to preserve your health deal with good cooking from scratch and to avoid certain ingredients. And in some health conditions according TCM you should eliminate these ingredients from your diet for real. Than patients get frustrated in how to integrate food from their memories into this new TCM diet. They asked me to create a recipe that was gluten free, dairy free and still taste good with organic ingredients. So that is my choice of muffin that does not taste like Tim Horton’s ones with milk and butter but still good enough that will make your kids to ask for more. Enjoy!
½ cup coconut flour
½ cup tapioca flour
½ cup coconut palm sugar
1/3 cup unsweetened cocoa powder
½ teaspoon baking soda
½ teaspoon baking powder
3 eggs, whisked
1 cup applesauce
½ cup melted coconut oil
1 teaspoon vanilla extract
2/3 cup of unsweetened dried coconut
1/3 cup of maple syrup
1/2 tea spoon of cinnamon
1/3 tea spoon of ground cloves
1/2 cup of chopped dates in small pieces
1/2 tea spoon of salt
Final Look : you can add sieved iced sugar on top to look nicer
Preheat oven to 350 degrees.
Get a small pan and add the maple in medium heat, add the dried coconut, the cinnamon and cloves, mix well for 5 minutes until the coconut get a caramel brownish color.
in a medium bowl mix together most of the dry ingredients: coconut flour, tapioca flour, coconut sugar, cocoa powder and salt.
In a another bowl, whisk together eggs, applesauce, coconut oil and vanilla extract.
Add dry ingredient to wet ingredient and mix until they get stick chocolate bate .In the end mix baking soda and baking powder.
In the end add the dates and the coconut mixture and mix well together.
Use an ice cream scoop to scoop mixture into a muffin papers containers. I used a muffin pan. This Recipe good for 12 muffins
Bake for 30 minutes. Than you can add sieved iced sugar on top to look nicer
